
Storing Prepared Food Safely
The following is general USDA guidance, not a product-specific shelf-life promise from The Roaming Fork.

USDA recommends keeping refrigerators at 40°F or below. Refrigerate perishable food within two hours, or within one hour when temperatures are above 90°F. Plan transport accordingly.
Follow meal-specific instructions
USDA generally recommends using refrigerated leftovers within three to four days. That does not establish the use-by date of a particular purchased meal. Follow the label and contact the kitchen if instructions are missing.
Do not guess about freezing
Ask about the particular food and packaging before freezing it. Storage suitability and quality vary. If food has been held unsafely, reheating does not make it a safe way to avoid waste.
