
Reheating Prepared Meals Safely

Do not assume a container, lid or sauce cup is microwave-safe. Follow its labeling or transfer food to an appropriate dish. Contact the kitchen if packaging instructions are unclear.
Check temperature, not just time
USDA guidance recommends reheating leftovers to 165°F, checked with a food thermometer. Microwave wattage, portion size and starting temperature vary, so a fixed number of minutes is not a reliable safety test.
Heat evenly
USDA recommends covering and rotating food for even heating and checking the temperature in several places. Keep cold accompaniments separate when the meal instructions call for it.
